PEANUT BUTTER COOKIES:

1 cup peanut butter

1 cup coconut sugar

1 egg

1 tsp baking soda

4 Justin’s Peanut Butter Cups, cut into quarters

Preheat oven to 350°F. Line a baking sheet with parchment paper. In a mixer, combine peanut butter, sugar, egg, and baking soda. Blend for 2–3 minutes until well combined. Roll into 1” balls.  Add a piece of Justin’s Peanut Butter Cup on top of each. Bake for 10–12 minutes.

 

Peach Crisp

vegan, gluten-free

4 peaches, sliced

1 lemon, juiced

1/3 cup coconut sugar

1 tsp cinnamon

Topping:

1 cup Purely Elizabeth Ancient Grain Original Oatmeal

½ cup walnuts, chopped

1/3 cup coconut sugar

5 tbsp coconut oil

¼ cup millet flour

Preheat oven to 350°F. In a bowl, combine peaches, cinnamon, lemon, and coconut sugar. Meanwhile, in a separate bowl, combine topping ingredients. Pour fruit mixture into an 8 x 8 pan and sprinkle topping evenly. Bake for 30 minutes or until top is browned and fruit is bubbling. Serve with ice cream on top!
