For many of us fast meals that are healthy seem foreign but thanks to King Soopers Registered Dietitian, Cristina Rebellon, it is possible. She stopped by to show us a few healthy recipes that are fast, easy and healthy.

Hatch Chile Chicken Tortilla Soup

  • 4 large tomatoes
  • 1/4 cup grape seed or olive oil, divided
  • 1/2 white onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 32-ounce box reduced-sodium chicken broth
  • 4 hatch chiles, roasted, stemmed and seeded
  • one whole Simple Truth roasted chicken
  • 1/4 cup cilantro, chopped
  • Optional toppings: plain Greek yogurt, crushed tortilla chips, chopped cilantro, avocado

Instructions

  1. Preheat broiler. Slice tomatoes in half then place cut side down onto baking sheet. Drizzle with 2 tablespoons of the olive oil, season with salt. Broil for about 5 minutes
  2. Preheat a Dutch oven or heavy bottom pot over medium heat. Add remaining oil then add onions, cooking for about five minutes or until they become translucent. Add garlic and cumin, cook for another minute or two, stirring frequently.
  3. Add tomatoes to pot. Pour in chicken broth and stir well. Allow to simmer for 10-15 minutes, then blend mixture in a blender in batches then pour back into pot. Stir in shredded chicken and chiles. Allow to simmer for another 10-15 minutes.

Stir in chopped cilantro and ladle into soup bowls. Add toppings as desired and serve immediately.

 

Stir Fry

1 Bag Kroger Stir Fry frozen vegetables

½ Simple Truth Roasted chicken, shredded

2 T Grape seed oil

Braggs liquid aminos (optional)

Sesame seeds (optional)

Precooked brown rice, quinoa, or whole grain pasta of choice

 

  1. Add oil to pan over medium high heat
  2. Sautee chicken until warmed through or about 2 minutes
  3. Add frozen vegetables and stir constantly until heated through.
  4. Serve over grains and top with desired sauces. Enjoy immediately.
