Fast casual dining has become a staple for so many of us who are time-crunched but still want healthier options. Still, most of the time, it means picking one type of food. That’s why the founder of Noodles & Company decided to incorporate flavors from across the globe.

12 types of noodles and countless possibilities. “We really like to say that we’re the noodle authority,” said Jonathan Tress, the V.P. of Marketing for the company.

Noodles & Company serves up comfort staples like mac & cheese, with seasonal twists on the time-tested classics like Bacon Mac & Cheeseburger, Barbeque Pork Mac & Cheese and Buffalo Mac & Cheese which are available right now during the fall/winter season.

But it’s more than just mac & cheese, Noodles & Company has a wide variety of flavors from around the world like their popular Tuscan Fresca, Japanese Pan Noodles and Pesto Cavatappi.

There are options for just about everyone; vegetarian, gluten-free and even salads for those watching their carbs.

“You can come in, pick what you want, customize it, we don’t start cooking it until you’ve ordered it,” said Tress.

Noodles & Company first opened in Cherry Creek in 1995. Now the fast casual chain has more than 500 locations across 36 states, Washington DC and Canada. Yet, it remains uniquely Coloradan even in design.

Tress said, “One of the issues in Colorado is the beetle kill in the pine tree, that wall to recycle all that wood is beetle-kill woven pine.”

Fast, fresh and natural, Noodles & Company is known for its fan favorites, but is also constantly evolving.

“We’re testing a couple new great dishes right now, one is a pork adobo and a new Bangkok curry,” Tress said.
