DENVER — We love the Broncos, and we certainly love Peyton Manning. In this Game Day Dish, we’re helping you eat like the high rollers. We went to the Chef for the suites at Sports Authority Field to come up with a Manning-themed dish to help you cheer on the team.
Chef Jenna Johansen of Epicurean Group, the largest caterer in Colorado and the company in charge of suite food, says game day food doesn’t have to be the same old, same old.
“You’re going to have beer, you’re going to have pretzels, you’re going to have dip. But it’s fun to do a little bit different stuff every time,” she said.
She’s created Peyton’s Whiskey Shrimp, an ode to Manning’s past and present.
“My idea was taking some of Peyton’s past and involving a little bit here today,” said Johansen. “He’s from New Orleans, so naturally I chose shrimp. He went to school in Tennessee so I chose Jack Daniels Tennessee whiskey, and of course he’s here in Colorado so I have some Colorado smoked trout.”
Peyton’s Whiskey Shrimp

For the shrimp:
1 tbsp unsalted butter
1 lb jumbo tail off, peeled shrimp
1/4 cup Jack Daniels Whiskey
1 cup flaked smoked Rocky Mountain trout
1 baguette, sliced on the bias
Heat the shrimp in saute pan to cook halfway through. Add the whiskey, flambe (watch your hair with the flame)
For the sauce:
1 tbsp unsalted butter
2 cloves garlic, minced
2 Tbsp minced onion
Juice of 1 lemon squeezed
1 cups heavy whipping cream
1 Tbsp whole grain mustard
1 Tbsp chopped parsley
1 Tbsp chopped chives
to taste, kosher salt and black pepper
Saute garlic and onion in saute pan, add lemon juice and cream, reduce by half. Add remaining ingredients, season to taste.
Combine shrimp and sauce with the trout to heat through, spoon on top of the baguette to serve.
