We all want to make sure our family eats healthy, which means for a lot of us buying organic, but it can be difficult when you are on a budget.  King Soopers Registered Dietitian Cristina Rebellon tells us about the new Simple Truth line they offer that is affordable, and natural and they do offer some items in organic selections. Try their Chicken 3 Bean Salad recipe down below.

Chicken and 3 Bean Salad Recipe

Ingredients:

3 large cloves garlic

½ tsp salt (or to taste)

1/3 cup oil of choice

2/3 cup red wine vinegar

3 Tbsp. whole grain mustard

1 cup chopped radicchio

1 15 oz. can each Pinto, Kidney, and Garbanzo beans (use “no salt added” when possible)

3 cups grilled chicken, diced

1 each zucchini and yellow squash, diced

1 cup basil, chiffonade

2 heads Belgian Endive

 

Directions:

  1. Sauté garlic in 2 Tbsp. of olive oil until golden brown, add remaining oil, salt, mustard, and whisk in a large bowl.
  2. Toss in beans, squash, radicchio, and chicken. Chill for about an hour.
  3. Separate leaves of endive onto plates. Top with mixture and garnish with fresh basil for an amazing appetizer!
